I have found this section on my back office/preferences/meta tags and wanted to know what it is for and what do i do with it.

it currently says :

    1       404.php
   2    best-sales.php
   3    contact-form.php
   4    index.php
   5    manufacturer.php
   6    new-products.php
   7    password.php
   8    prices-drop.php
   9    sitemap.php
   10    supplier.php

I have edited the index to my site keywords etc but do i or should i edit any of the other sections

There wouldn't be any harm in adding meta tag data to the other pages.

Changing supplier.php and manufacturer.php wont have any affect because they are controlled from the manufacturers and supplier pages when you create them.
